Broccoli Caesar Chicken Salad
This crunchy goodness is the perfect lunch or dinner that feels like a 5 star meal, but really it’s a throw together kind of dish. It’s crunchy and filled with flavor and super high in protein! My kids love it too! I love throwing this together after a long day at the zoo! It’s perfect!
Ingredients
- 2 cups2 cups2 cups Broccoli, Chopped
- 1 cup1 cup1 cup Red Onion, Chopped
- 1 cup1 cup1 cup Carrots, Shredded and chopped
- 1 cup1 cup1 cup Chicken Breast, Shredded and cooked
- 0.5 cup0.5 cup0.5 cup Caesar Dressing - Primal Kitchen
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt

- In a mixing bowl, add the chopped broccoli, red onion and carrots. Set aside.
- In a small bowl, add the Caesar dressing and Greek yogurt. Mix together until a thick salad dressing is created. Pour over veggie mixture and stir together. Add your shredded chicken and stir more.
- Serve it on a plate by itself or with crackers! Enjoy!
Notes
You can add any other veggies you want to this dish! It’s kind of a “random fridge clean out meal” if you wanted it to be! Adding pasta to this would also be delicious!
