This crunchy goodness is the perfect lunch or dinner that feels like a 5 star meal, but really it’s a throw together kind of dish. It’s crunchy and filled with flavor and super high in protein! My kids love it too! I love throwing this together after a long day at the zoo! It’s perfect!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a mixing bowl, add the chopped broccoli, red onion and carrots. Set aside.
  2. In a small bowl, add the Caesar dressing and Greek yogurt. Mix together until a thick salad dressing is created. Pour over veggie mixture and stir together. Add your shredded chicken and stir more.
  3. Serve it on a plate by itself or with crackers! Enjoy!

Notes

You can add any other veggies you want to this dish! It’s kind of a “random fridge clean out meal” if you wanted it to be! Adding pasta to this would also be delicious!
