Chicken and Gnocchi Soup
This soup has become a household favorite and one that we prep at the beginning of the week for quick and easy meals! It’s absolutely delicious and healthy. The kids love it too because it has a tiny bit of sweetness in it from the heavy cream. It’s filled with protein, vegetables and lots of good flavors! It’s perfect for the winter months ahead!
Ingredients
- 1 whole1 whole1 whole Yellow Onion
- 1 cup1 cup1 cup Celery
- 2 cups2 cups2 cups Carrots
- 16 fl oz16 fl oz16 fl oz Chicken Broth

- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 2 cup2 cup2 cup Chicken Breast, Cooked

- 1 lb1 lb1 lb Potato Gnocchi
- 3 cups3 cups3 cups Spinach
- 2 Tbsp2 Tbsp2 Tbsp Garlic Powder

- 1 Tbsp1 Tbsp1 Tbsp Onion Powder

- 2 Tbsp2 Tbsp2 Tbsp Himalayan Pink Salt

- 1 Tbsp1 Tbsp1 Tbsp Black Pepper

- 2 Tbsp2 Tbsp2 Tbsp Thyme

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- First, chop your onions, carrot and celery. Add to a large pot. Add all of your chicken broth and spices. Bring to a boil and then simmer over medium heat until all the vegetables are cooked and soft.
- Add the heavy whipping cream, cooked chicken and gnocchi. Stir everything and place a top over the pot to let it simmer and cook. Add spinach and stir.
- Place the temperature on low, the top back on the pot and let it cook for another 10-15 minutes.
- Enjoy!
Notes
For the chicken breast, you can cook the chicken beforehand and shred it yourself. I have also used (2) organic canned chicken breast in this recipe because it’s easier for a quick meal prep! Sometimes, I will add more spices depending on flavor. Be sure to add to your liking. If the soup is too thick and you want it a bit thinner, add a little bit of water at the end.
