southwest taco salad
a hearty taco salad, full of bold, spicy flavor?! count me in 🌶🥗
“chorizo”-style meat, endless toppings, your favorite masa's beef tallow tortilla chips (the new hatch chile flavor slaps), & a spicy twist on my classic greek yogurt ranch.
a super easy, gluten-free, protein-packed, flavorful, & balanced meal that's 100% worth adding to your weekly (or at least monthly) dinner rotation
Ingredients
"chorizo" meat
- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 1.5 - 2 lb1.5 - 2 lb1.5 - 2 lb Ground Beef, or meat of choice

- 10 oz10 oz10 oz Diced Tomatoes & Green Chilies - Rotel
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Chorizo Seasoning - Siete Foods, see notes for my homemade version

- greek yogurt ranch dressing (click for recipe), using the spicy southwest variation
- 0 Lettuce, Spring Mix Salad Greens
- sautéed frozen vegetables (click for recipe), I used corn
- Black Beans, drained & rinsed

- Tomato, diced
- Avocado, diced
- Jalapeño Pepper, sliced, raw or pickled
- Red Onion, sliced, raw or pickled
- Cilantro, finely chopped
- Cheddar Cheese, or cheese of choice, shredded

- Traditional Tortilla Chips - Masa, any flavor, I used the hatch chile flavor

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
"chorizo” meat
- in a large skillet, sauté peppers & onions for 6-8 minutes.
- add ground meat to the skillet & brown.
- once meat is cooked, add diced tomatoes/green chiles, vinegar & seasonings to make “chorizo” meat; simmer for 10-15 minutes.
building your salad
- make a batch of greek yogurt ranch with the spicy southwest additions.
- prepare other salad toppings - saute veggies, heat beans, dice veggies, etc.
- to a bowl, first add a layer of leafy greens, then layer on “chorizo” meat → any/all toppings you like → masa corn tortilla chips → finish with drizzle of spicy southwest greek yogurt ranch.
