steak fajita skillet nachos
when I've had steak fajitas before, it always seems to be SUPER tough & chewy. well I just had to take matters into my own hand, marinate a delicious cut of steak, & cook it to my liking! this is a PERFECTLY juicy steak, paired with my favorite skillet nachos. maybe it's time to become a steak fajita fan after all!
Ingredients
steak fajita meat
- 2 lb2 lb2 lb Petite Top Sirloin - US Wellness Meats, I used bison
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Beef Fajita Seasoning - Siete Foods
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
verde protein queso
- 5 oz5 oz5 oz Green Chilies
- 1/2 cup1/2 cup1/2 cup Cilantro
- 1/2 cup1/2 cup1/2 cup Cottage Cheese
- 1/4 cup1/4 cup1/4 cup Plain Greek Yogurt
- 3-4 oz3-4 oz3-4 oz Pepper Jack Cheese
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in a little water
- 1 tsp1 tsp1 tsp Salt and Pepper, to taste
- 1/2-1 cup1/2-1 cup1/2-1 cup Water
fajita veggies
- Bell Pepper, sliced
- Onion, sliced
- Baby Bella Mushrooms, sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, toss together steak mix together steak, seasoning, apple cider vinegar, & lime juice; marinate for at least 30 minutes, up to 6 hours.
- in a food processor, add all verde protein queso ingredients, except the water.
- transfer queso + water to a sauce pan & simmer until thickens or until remaining ingredients are prepared.
- heat a griddle or skillet, then add steak & cook for 2-3 minutes per side or until reached desired doneness.
- rest steaks until veggies are ready, then slice against the grain in thin strips.
- in a separate skillet, saute peppers, onions, & mushrooms until tender.
- to build nachos, add tortilla chips to a plate, then layer on fajita veggies, steak fajita meat, & queso sauce.
