- 2 whole2 whole2 whole Red Bell Pepper, diced
- 2 whole2 whole2 whole Zucchini, diced
- 1 cup1 cup1 cup Green Chiles, Fire Roasted
- 1 tsp1 tsp1 tsp Cumin, Ground

- 1 tsp1 tsp1 tsp Oregano, Dried

- .5 tsp.5 tsp.5 tsp Chili Powder
- .5 tsp.5 tsp.5 tsp Paprika

- .25 tsp.25 tsp.25 tsp Black Pepper

- 0.25 tsp0.25 tsp0.25 tsp Salt

- 4 cups4 cups4 cups Beef Instant Bone Broth - Bare Bones, Prepared (or chicken flavored)

- 1 cup1 cup1 cup Cashewmilk Yogurt, Plain Unsweetened - Forager Project, or. coconut milk
- 3 - 4 cups3 - 4 cups3 - 4 cups Rotisserie Chicken, shredded

- 1 Tbsp1 Tbsp1 Tbsp Lime Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat oil in a large pot over medium heat
- Add onion, garlic, jalapeño, zucchini and bell pepper
- Cook until softened, about 5 minutes
- Stir in cumin, oregano, chili powder, paprika, salt, and pepper
- Toast for 30 seconds to release flavor
- Pour in broth, yogurt, and green chiles
- Stir well, then add shredded rotisserie chicken
- Bring to a gentle boil, then reduce heat and simmer uncovered for 30-45 minutes to thicken slightly and allow flavors to blend.
- Stir in lime juice and cilantro before serving.
- Adjust seasoning as needed.
