These Maple Bliss Pecan Cookies are buttery, nutty, and perfectly sweet with rich maple flavor in every bite. They bake up tender and melt-in-your-mouth — like a cross between a pecan shortbread and a maple butter cookie. Each cookie is topped with a smooth maple icing and optional candied pecans for an irresistible finish. Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large mixing bowl, cream together the butter and powdered sugar using a hand or stand mixer for 2–3 minutes, until light and fluffy.
  2. Mix in the vanilla and Mixed Up Foods Maple Bliss nut butter until smooth. Stir in the finely chopped pecans.
  3. Add the flour and salt. Mix on low speed until just combined — the dough will be slightly crumbly but should hold together when pressed.
  4. Cover and refrigerate for at least 1 hour, or up to 24 hours.
  5. When ready to bake, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop about 1 heaping tablespoon of dough and roll it into a ball. Place cookies about 2 inches apart on the baking sheet.
Bake for 12 minutes, or until the edges are set but not browned. Cool on a wire rack.
  7. Make the icing: In a small bowl, whisk together the powdered sugar, Maple Bliss nut butter, vanilla, apple pie spice, and cream until smooth.
  8. Once the cookies are completely cool, spoon or drizzle icing over each one. Top with candied pecans if desired.
  9. Enjoy immediately for a soft, creamy icing, or let the cookies sit for a few hours for the icing to fully set.

Notes

This is similar to a shortbread cookie batter. It will be a tad crumbly but not so crumbly that you can't roll the batter into a ball.
