Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large mixing bowl, cream together the butter and powdered sugar using a hand or stand mixer for 2–3 minutes, until light and fluffy.
- Mix in the vanilla and Mixed Up Foods Maple Bliss nut butter until smooth. Stir in the finely chopped pecans.
- Add the flour and salt. Mix on low speed until just combined — the dough will be slightly crumbly but should hold together when pressed.
- Cover and refrigerate for at least 1 hour, or up to 24 hours.
- When ready to bake, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop about 1 heaping tablespoon of dough and roll it into a ball. Place cookies about 2 inches apart on the baking sheet. Bake for 12 minutes, or until the edges are set but not browned. Cool on a wire rack.
- Make the icing: In a small bowl, whisk together the powdered sugar, Maple Bliss nut butter, vanilla, apple pie spice, and cream until smooth.
- Once the cookies are completely cool, spoon or drizzle icing over each one. Top with candied pecans if desired.
- Enjoy immediately for a soft, creamy icing, or let the cookies sit for a few hours for the icing to fully set.
Notes
This is similar to a shortbread cookie batter. It will be a tad crumbly but not so crumbly that you can't roll the batter into a ball.
