protein keto granola
a protein & superfood–boosted version of my maple keto granola?! YES, PLEASE. this is hands down the best granola I’ve ever made — completely sugar-free, gluten-free, high-protein, nutrient-dense, salty-sweet, & absurdly addictive!
Ingredients
dry ingredients
- 1 cup1 cup1 cup Chia Seeds, finely ground

- 1 cup1 cup1 cup Hemp Hearts, roughly chopped, may sub any nut or seed

- 1 cup1 cup1 cup Pumpkin Seeds, roughly chopped, may sub any nut or seed

- 1 cup1 cup1 cup Walnuts, roughly chopped, may sub any nut or seed

- 1 cup1 cup1 cup Hazelnut, roughly chopped, may sub any nut or seed
- 1 cup1 cup1 cup Macadamia Nuts, Raw, roughly chopped, may sub any nut or seed
- 1 tsp1 tsp1 tsp Bourbon Barrel Smoked Vanilla Finishing Salt - Texas Salt Co., or salt of choice

wet ingredients
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted, of any fat of choice

- 0.5 cup0.5 cup0.5 cup mixed nut butter (click for recipe), or nut butter of choice
- 1 cup1 cup1 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp White Miso Paste, optional

- 2 tsp2 tsp2 tsp Pure Vanilla Extract

- 2 tsp2 tsp2 tsp Organic Maple Extract
- 0.5 cup0.5 cup0.5 cup Chocolate Collagen - Further Food

- 1/2 cup1/2 cup1/2 cup Vanilla Collagen Peptides Powder - Further Food

- 2 Tbsp2 Tbsp2 Tbsp Superfood Turmeric Golden Milk Powder - Further Food

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 300.
- in a bowl, combine chia seeds + any nuts/seeds combination you like with any flavor of smoked salt.
- in a sauce pan over medium heat, melt fat - I like to brown the butter first.
- mix in remaining ingredients & heat until everything is fully combined.
- using a large spatula, thoroughly mix wet ingredients into dry ingredients.
- add granola to a full-sheet baking sheet.
- bake for 10 minutes, then take it out and mix thoroughly.
- press down mixture very firmly, then bake for an additional 15 minutes.
- once the granola is done baking, press firmly again. allow it to cool completely.
- I then transfer the granola to the freezer for ~1-2 hours before breaking into clusters; store in the freezer.
