Banana nut chai cake (gf)
Nothing says cozy fall baking none other than a mix of banana bread and chai spices. This cake is thick, moist and filled with delicious nuts.
Ingredients
- 2 cups2 cups2 cups Gluten-Free All-Purpose Flour - Primal Palate

- 1.5 cups1.5 cups1.5 cups Banana, Overripe and mashed
- 0.5 cup0.5 cup0.5 cup Butter, Salted

- 1 cup1 cup1 cup Brown Sugar, Light
- 0.333 cup0.333 cup0.333 cup Granulated White Sugar

- 2 whole2 whole2 whole Eggs, Room temp
- 0.333 cup0.333 cup0.333 cup Sour Cream
- 2 Tbsp2 Tbsp2 Tbsp Chai Spice Blend
- 1 tsp1 tsp1 tsp Baking Powder

- 1 tsp1 tsp1 tsp Baking Soda
- 0.333 cup0.333 cup0.333 cup Organic Sprouted Pecans - Lark Ellen Farm, Chopped

- 1 tsp1 tsp1 tsp Vanilla Bean Paste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees Fahrenheit
- In a large bowl sift gluten free flour, baking soda, baking powder and chai spices
- In a separate medium sized bowl cream cooled melted butter and sugars until light and fluffy
- Add in room temperature eggs one by one until fully mixed
- Next add mashed bananas and vanilla extract
- Set aside and use a food processor to chop your walnuts and pecans
- Combine dry ingredients with wet ingredients
- Fold in nuts
- Lastly add sour cream and mix thoroughly
- Line an 8" cake pan with parchment paper and spray the sides
- Fill with cake batter and let this sit for 10 minutes before baking
- Bake for 45-50 minutes, ensure the middle is fully cooked by using a fork or knife to check
- Once baked let this sit for 10 minutes then you can remove and add a simple glaze by brushing on with a pastry brush
- The glaze will harden
- Slice and enjoy!
Notes
If you want more or less chai spices feel free to play around with the amount. I wanted the chai to shine through. If you want a rounder cake you can go up to 10" cake pan.
