Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

meat & bean mixture

  1. to a large skillet, brown meat of choice; drain once cooked.
  2. stir in bacon, beans, seasoning, & water; simmer for ~10 minutes.
  3. use a measuring cup to see how much yields - probably around 8 cups.

eggs

  1. in a food processor, add all ingredients for eggs.
  2. lightly clean out large skillet from above, then add eggs & cook on low heat.
  3. stir frequently until produces nice fluffy scrambled eggs.
  4. use a measuring cup to see how much yields - probably around 6 cups.

assembling burritos

  1. get out remaining ingredients, then start your assembly line with burritos: tortilla (lightly heat to make more pliable) → a heaping ⅓ cup of meat & bean mixture → ⅓ cup scrambled eggs → handful of cheese + other add-ins you like → roll into a burrito.
  2. after rolling into a burrito, roll & secure with wax paper.
  3. set on a sheet pan & freeze. once frozen transfer to a zip-lock bag.
  4. pull out night before & reheat in the microwave.
  5. serve with salsa or hot sauce & enjoy!
