Thai-Inspired Turkey Noodle Soup
I’ll be the first to say leftover turkey isn’t always my favorite to repurpose… but this Thai-inspired turkey noodle soup is next-level. The noodles and turkey soak up a creamy coconut curry broth that really packs a punch. It’s not spicy, it’s cozy, and it comes together in under 30 minutes. Provecho amigos!
Ingredients
- 0.5 whole0.5 whole0.5 whole Yellow Onion, finely chopped
- 4 whole4 whole4 whole Garlic, cloves, grated

- 1 Tbsp1 Tbsp1 Tbsp Ginger Root, grated, about a 1-inch piece

- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Red Curry Paste, I use 2, add more for more heat
- 6 cups6 cups6 cups Water
- 4 whole4 whole4 whole Chicken Instant Bone Broth - Bare Bones

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp ARGILOS II GREEN Extra Virgin Olive Oil (500ml) - Argilos

- 2 tsp2 tsp2 tsp Wheat-Free Tamari, Low Sodium

- 13.5 oz13.5 oz13.5 oz Coconut Milk, 1 can
- 1.5 tsp1.5 tsp1.5 tsp Coconut Sugar

- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Real Salt - Redmond, to taste
- 1 whole1 whole1 whole Lime, freshly juiced

- 8 oz8 oz8 oz Rice Noodles, thin or thick

- 2 cups2 cups2 cups Turkey Breast, shredded or roughly chopped
- 0.5 cup0.5 cup0.5 cup Green Onion (Scallion), sliced

- 0.5 cup0.5 cup0.5 cup Cilantro, chopped
- 1 whole1 whole1 whole Lime, sliced in wedges

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook or soak rice noodles per package instructions, drain and set aside.
- Heat oil in a large pot over medium heat. Add onion and sauté for about 3-5 minutes, until golden and tender.
- Add garlic and ginger, sauté for about a minute, then add red curry paste. Toast all together for an additional 30 seconds.
- Pour in water and bone broth packets. Bring to a simmer.
- Stir in tamari, lime juice, coconut sugar, and coconut milk. Bring to a light boil.
- Add in shredded turkey and warm through for 2-3 minutes.
- Adjust seasoning to taste, see note below. ***
- Place rice noodles in bowls and ladle soup over top. Garnish with lime, cilantro, green onions. Provecho!
Notes
*This soup pairs well with chicken and shrimp as well! **Season to taste:
- Add salt or more tamari (for richer umami flavor)
- Add more lime juice (for more acidity)
- Add more curry (for more heat)
- Add more coconut sugar (for sweetness)
