Make Ahead Turkey Gravy
MAKE-AHEAD TURKEY GRAVY đŠâšHosting during the holidays can be hectic, so I'm all about prepping as much as possible ahead of time. One of my favorite tricks? Making the turkey gravy in advance! Itâs a game-changerâless mess, less stress, and more time to enjoy the day with loved ones. I've been doing this for years, and itâs a lifesaver. Plus, the gravy is absolutely delicious.
Ingredients
- 1 whole1 whole1 whole Turkey Breast, Bone-In, Skin On, about 3 lbs

- 2 whole2 whole2 whole Turkey Leg
- 4 whole4 whole4 whole Turkey, Thigh
- 4 whole4 whole4 whole Turkey, Wing
- 666 Celery, stalks, cut in half
- 2 whole2 whole2 whole Onion, not peeled, cut in quarters
- 111 Poultry Seasoning - Primal Palate

- 111 Kosher Flake Salt - Primal Palate

- 111 Black Pepper - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Roast: Add turkey pieces to a roasting pan with 6 celery stalks (cut into thirds) and 3 quartered onions. Generously season with poultry seasoning, cracked black pepper and flake salt. Roast at 450°F for 1 to 1.5 hours, until golden brown.
- Simmer: Transfer everything (turkey, bones, veggies) to a large stockpot. Add 32 to 48 oz turkey broth (up to 64 oz). Simmer for at least 2 hours, until the meat falls off the bone. Strain out the solidsâyouâll be left with a rich, flavorful broth. Add the broth to a stock pot.
- Make the gravy: Whisk in a roux (flour or xanthan gum for low-carb) to thicken. Season with salt and pepper to taste.
- Don't waste the meat from the bones, freeze for later so you can make soup, pot pies, etc.
Notes
Make up to 3 days in advance and store in the fridge. Want to prep even earlier? Freeze it for up to 2 months!
