MAKE-AHEAD TURKEY GRAVY 🩃✹Hosting during the holidays can be hectic, so I'm all about prepping as much as possible ahead of time. One of my favorite tricks? Making the turkey gravy in advance! It’s a game-changer—less mess, less stress, and more time to enjoy the day with loved ones. I've been doing this for years, and it’s a lifesaver. Plus, the gravy is absolutely delicious.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Roast: Add turkey pieces to a roasting pan with 6 celery stalks (cut into thirds) and 3 quartered onions. Generously season with poultry seasoning, cracked black pepper and flake salt. Roast at 450°F for 1 to 1.5 hours, until golden brown.
  2. Simmer: Transfer everything (turkey, bones, veggies) to a large stockpot. Add 32 to 48 oz turkey broth (up to 64 oz). Simmer for at least 2 hours, until the meat falls off the bone. Strain out the solids—you’ll be left with a rich, flavorful broth. Add the broth to a stock pot.
  3. Make the gravy: Whisk in a roux (flour or xanthan gum for low-carb) to thicken. Season with salt and pepper to taste.
  4. Don't waste the meat from the bones, freeze for later so you can make soup, pot pies, etc.

Notes

Make up to 3 days in advance and store in the fridge. Want to prep even earlier? Freeze it for up to 2 months!
