Classic Brownies (Vegan)
This is a simple, easy, no-frills brownie that takes you back to your childhood. They are a little cakey, a little fudgy, and just chocolatey enough. Sometimes we need to forgo all those fancy flavors and get back to basics. These brownies whip up in a matter of minutes and bake to perfection in 30 minutes.
Ingredients
- 60 grams60 grams60 grams Dark Chocolate, (Lindt Excellence 70% Bar)

- 8 Tbsp8 Tbsp8 Tbsp Plant-Based Butter, (Earth Balance Vegan Buttery Sticks)
- 14 Tbsp14 Tbsp14 Tbsp All Purpose Flour
- .125 tsp.125 tsp.125 tsp Baking Soda
- 1 cup1 cup1 cup Cane Sugar, (Zulka Pure Cane Sugar)
- 1 tsp1 tsp1 tsp Vanilla Extract

- 2 Tbsp2 Tbsp2 Tbsp Flaxseed Meal
- 2 Tbsp2 Tbsp2 Tbsp Almond Milk Yogurt, (room temperature)
- 4 Tbsp4 Tbsp4 Tbsp Water
- .25 cup.25 cup.25 cup Walnuts, (roughly chopped)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare an 8×8 pan by lining it with parchment paper. We are going to preheat the oven later.
- In a small bowl or measuring cup, add the ground flax seed, yogurt and water. Stir to fully combine and set aside to thicken – 5 to 10 minutes.
- To a small pot, add the chocolate and butter; melt over medium heat and set aside.
- To a medium bowl, add the sugar and flax meal mixture. With a hand mixer on medium speed, blend for 2 minutes. Add the melted chocolate/butter mixture and the vanilla extract, blend on medium speed for another 2 minutes.
- Add the flour and baking soda and fold them in just until no more flour can be seen.
- Add the walnuts and chocolate chips, fold them in just until combined.
- Pour the batter into the prepared pan and set aside. Preheat the oven to 350F.
- Once the oven is ready, bake the brownies for 30 minutes or until a toothpick inserted comes out with minimal crumbs and the edges are pulling away from the pan.
- Allow the brownies to completely cool in the pan.
- Store the brownies in an airtight container at room temperature.
