Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Slice sweet potato into 1/2" rounds. Spray them with avocado cooking spray and sea salt
- Bake at 400 for 30-40 minutes, flipping halfway, until desired level of crispiness
- Make cream sauce
- Melt butter in a sauce pan , then whisk in flour
- Add cream and allow to simmer 4-5 minutes over medium heat
- Stir in parmesan and spices
- If your mixture is too thick thin with several tbsp of milk
- Can set aside until ready to use (also refrigerates and reheats well, as you will have extra)
- Make caramelized onions
- Thinly slice your onion, and place in preheated skillet with olive oil
- Cook over low-med heat roughly 15 minutes, stirring regularly
- Once soft, add tamari and stir to coat
- Set onion aside, and use the pan to cook your steak
- Heat skillet with olive oil, and layer your stew beef cubes without overcrowding the pan.
- Sprinkle with steak seasoning and cook 2-3 minutes per side
- When ready, assemble your sliders with sweet potato rounds, steak cubes, caramelized onions, parmesan cream sauce, fresh thyme, and freeze dried cherry tomatoes for an extra crunch
- Enjoy!
Notes
You'll most likely have leftover onions and cream sauce. Store both in an airtight container in the fridge and reheat a few minutes on the stove prior to enjoying with your next dish
