Lemon blueberry cookies (GF)
Looking for a small batch cookie recipe full of brightness? This isn't your typical baked goods that'd you'd bring to a party or even game day but it's bright notes of citrus and baked blueberry lemon granola is sure to bring a smile to anyone.
Ingredients
- 1.125 cup1.125 cup1.125 cup Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 6 Tbsp6 Tbsp6 Tbsp Frozen Blueberries
- 1 tsp1 tsp1 tsp Baking Soda
- 1 Tbsp1 Tbsp1 Tbsp Lemon Zest
- 1 tsp1 tsp1 tsp Salt

- 111 Egg
- 1 tsp1 tsp1 tsp Lemon Juice
- 0.25 cup0.25 cup0.25 cup Granulated White Sugar

- 0.25 cup0.25 cup0.25 cup Brown Sugar
- 0.333 cup0.333 cup0.333 cup Butter, Salted, Room temp

- 111 Lemon Blueberry Sprouted Granola (Grain-Free) - Lark Ellen Farm

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small container add in lemon zest and sugars. Press the zest into the sugars by hand
- In a medium bowl add room temperature butter and sugar lemon zest mixture
- Cream this together by hand with a spatula or with a mixture
- Add in an egg and vanilla extract and mix together
- Add in lemon juice and mix
- Add in dry ingredients (flour, baking soda and salt)
- Lastly add in frozen blueberries
- Take your bag of lemon blueberry granola and use your fingers to break the granola apart
- Spread the granola on a plate
- Use a small cookie scooper to place rounded cookies onto a cookie sheet
- Then take the cookies and roll them into the granola
- Place into the fridge for 30 minutes
- Preheat oven to 350 degrees
- Bake cookies for 8-10 minutes

I've also made these cookies with a blueberry cream cheese filling which is so delicious. This is a small batch cookie recipe that makes about 8- 10 cookies.
