BLT Quesadillas (Gluten Free) with Chipotle Mayo
What if we took Bacon Lettuce Tomato Sandwich and turned it into a Quesadilla? I can vouch that the result is delicioso! I used two types of bacon - US Wellness Sliced Bacon and US Wellness Canadian Bacon Sugar Free Canadian Pork Bacon Slices are cut from the pork loin, not the traditional pork belly, and then smoked over hickory chips for delicious flavor.
This quesadilla was a super duper hit and my family loved it. I used corn tortillas to keep them gluten free. I made a quick chipotle mayo to go with these BLT quesadillas!
These BLT quesadillas would be great to make for a game day party!
Ingredients
- 2 whole2 whole2 whole Sliced Fresh Side Pork Bacon (DIY Bacon) - US Wellness Meats, cut into 2 inch long pieces

- 2 whole2 whole2 whole Sugar-Free Canadian Pork Bacon Slices - US Wellness Meats

- 1 cup1 cup1 cup Lettuce, Romaine
- 2 whole2 whole2 whole Tomato, sliced
- 2 cups2 cups2 cups Cheddar Cheese, grated

- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted - Kerrygold, melted
- 0.25 cup0.25 cup0.25 cup Avocado Oil Mayonnaise
- 0.5 tsp0.5 tsp0.5 tsp Chipotle Chile Powder - The Spice Lab

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a pan and place the bacon pieces on it to cook. Cook on medium heat for about 3 mins on each side until the bacon is cooked and brown. Remove the bacon and keep aside.
- Place a non stick pan to heat.
- Meanwhile on a plate, place a corn tortilla and sprinkle with the grated cheese all over it. Next place the shredded lettuce and tomato slices over it. Next place the bacon pieces all over the tortilla. Again sprinkle with the grated cheese on top and place the second tortilla over it.
- Now slide this assembled quesadilla slowly and carefully into the hot pan. Dab with butter on the top. Cook for about two minutes and flip carefully to the other side. Again brush with melted butter. Cook for another two minutes. Carefully transfer quesadilla to a serving plate. Cut into 4 quarters using a pizza cutter.
- Repeat this process ton make three more quesadillas. Cut into quarters and arrange all the pieces on a serving tray.
- To make the chipotle mayo, mix the mayonnaise and chipotle powder in a small bowl using a fork or a small whisk. Serve this mayo with the BLT Quesadillas!
