Blame it on the show! So I was watching a British reality show on Netflix ‘The Million Pound Menu’ where small street food stall owners compete against each other to get potential investors to invest big money in their business. The episode I was watching had two young women trying to sell ‘cookie dough’ in cute cups with lots of fancy toppings! I don’t know what about those cookie dough cups caused my cravings but whoa I was hit hard! The cravings were also probably intensified because it was my birthday that day and I felt like I wanted a special treat. Correction- I felt like I deserved a special treat. C’mon this gal has been working her ass off these past few weeks – growing my nutrition consulting business, working part time as a consultant and writing an AIP cookbook! She clearly deserved some ‘cookie’ love! Funny thing is that I fancy myself more of a cake person than a cookie person. until now that is. But anyways the craving attack was so bad that I pretty much couldn’t even wait for the show to be over. I looked into my pantry to survey what I had, hatched a crude recipe in my mind and began the work. I didn’t even check to see if there were any other AIP cookie dough recipes! Exactly 10 mins later, I was biting into this delicious cookie dough that did not need any baking! It tasted divine just as is! As luck would have it, I had just made a small batch of my ‘AIP chocolate’ too just a couple days ago so I pulled that out, chopped it into tiny chocolate chips and then I had ‘chocolate chip cookie dough’. So freaking delicious and so freaking easy to make! OK in case you need any further assurance of how good this is…my husband and I finished the first batch within a couple hours. And we both generally stay away from sweets. LOL. And then the very next day I made a second batch! 🙂

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

Paleo/AIP version

  1. Melt the palm shortening or coconut oil in a microwave (for 1 minute) or on the stove before measuring it.
  2. In a medium size mixing bowl, add the melted oil, vanilla, maple syrup and salt. Stir to mix well. Then add the tiger nut flour and the collagen peptides. Mix using a spoon to form a dough. Depending upon the room temperature in your home, you may need to add an extra tbsp of collagen peptides if the dough looks too greasy.
  3. Divide the dough into about 16 equally portions and shape into balls.
  4. If adding chocolate (or carob) chips, mix those into dough while making the balls.
  5. Alternately, you can just portion out dough into mini serving cups and eat it with a spoon!

Keto version
