strawberry swirl cheesecake

- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract

- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly

- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 222 Eggs
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- mixed berry compote (click for recipe)
- 0.25 cup0.25 cup0.25 cup Strawberry Superfood Jam - Smash Foods, for strawberry compote

- 1 cup1 cup1 cup Frozen Strawberries, for strawberry compote

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- follow my instructions for making protein brownie bite batter.
- using a medium cookie scoop, add a scoop of protein brownie batter to a mini silicon muffin tin.
- bake for 10 minutes while preparing strawberry cheesecake layer.
- add all ingredients for strawberry cheesecake, except strawberry compote to a food processor & purée.
- follow my instructions for making strawberry compote - using strawberry jam + strawberries.
- add a small scoop cheesecake batter on top of bottom layer of brownies, then swirl in compote onto each bite.
- bake for ~25-30 minutes or until a toothpick comes out clean.
- cool bites completely, then refrigerate for at least 2 hours to firm up.
- pop out of muffin tins & enjoy!
