mole chicken street tostadas
omg this sauce is BURSTING with all of the bold, authentic flavor of traditional mole sauce, yet it is so stinking easy to make thanks to mesa de vida's latin sauce! I love making this as tostadas (a crunchy corn tortilla), but have also enjoyed them as tacos (a soft corn tortilla). however, you choose to enjoy it, you are going to be transported to a fiesta!
Ingredients
mole sauce
- 8.5 oz8.5 oz8.5 oz Latin Inspired Flavor Starter Sauce - Mesa de Vida, 1 bottle
- 1 oz1 oz1 oz 100% Cacao Organic Vegan Unsweetened Dark Chocolate Chips - Pascha Chocolate Co.
- 1 Tbsp1 Tbsp1 Tbsp Almond Butter
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 0.25 cup0.25 cup0.25 cup Cilantro, finely chopped
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.25 tsp0.25 tsp0.25 tsp Cinnamon, Ground
- 0.25 tsp0.25 tsp0.25 tsp Cumin, Ground
- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
chicken
- Avocado Oil, or fat of choice
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/2" cubes
- Water, for cooking
for serving
- Bell Pepper and Onion Blend, Frozen
- Corn Tortilla
- Cotija Cheese, or queso fresco
- Cilantro

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a sauce pan, add all ingredients for mole sauce; simmer to allow chocolate to melt.
- in a large skillet, add fat of choice & melt.
- add chicken thighs to skillet; cook for 6-8 minutes; add in ~½ mole sauce & ½ cup water; simmer for 5-6 minutes or until chicken is cooked through.
- in a separate skillet, saute peppers & onions until tender.
- to build tostadas, cook corn tortilla in the oven at 350 for 13-15 minutes.
- to build tacos, first warm corn tortillas to make them more pliable.
- add on mole sauce, mole chicken, sautéed veggies, cheese, & cilantro.
