cookie crust
- in a food processor, add BTR bars, protein powder, monk fruit, & salt; blitz into powder.
- transfer to a bowl, then add peanut butter + a little water; mix well.
- add 1 small cookie scoop of crust mixture to the bottom of a mini silicon muffin tin.
building remaining layers
- to a bowl, add marshmallows & microwave for 30 seconds to soften.
- using a food processor or immersion blender, combine cottage cheese, melted max mallows, & collagen peptides.
- clean small cookie scoop, then add a scoop of marshmallow fluff on top of cookie crust.
- freeze for 1 hour.
- to make chocolate collagen ganache: melt chocolate chips â mix in chocolate collagen peptides, & water until reaches a nice fudgy consistency.
- add a scoop of ganache to each bite, then freeze to harden.
- pop out of silicon muffin tins & enjoy!
