Ham and Vegetable Dijon
30-minute quick and easy meal to the rescue! Ham and Vegetable Dijon will instantly become a family favorite. The homemade creamy dijon sauce is kid approved, and totally makes the meal. This is a great recipe to use up ham and veggie leftovers!
Ingredients
- 111 Cream of Chicken Soup, (10.75 oz.) can (I typically use 98% fat free)
- .5 cup.5 cup.5 cup Whole Milk, 2% or
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Dijon Mustard, (choose your kick level)
- 2 cups2 cups2 cups Ham, (leftover or precooked), diced
- 1 lb1 lb1 lb Carrots, and peas (thawed from frozen)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend soup, milk and mustard in saucepan. Stir until just blended over medium heat.
- Add the diced ham. Cook over medium-low heat for 10 minutes, stirring regularly so the sauce doesn't stick.
- Add partially defrosted vegetables to the pan. Continue to cook over medium-low heat for an additional 10 minutes, or until vegetables are tender, stirring occasionally.
- Then serve warm over cooked rice or noodles for a complete meal!
Notes
To save time, make the rice or noodles alongside making the ham dijon on the stove. Avoid mixing the noodles or rice into the main pan before serving. They absorb too much of the sauce that way! Store in an airtight container and refrigerate. Enjoy within five days. Once cooled, you may also freeze leftovers in airtight freezer safe packaging for up to 3 months.
