Ingredients
- 1 lb1 lb1 lb Bell Pepper and Onion Blend, Frozen
- 3-43-43-4 Jalapeño Pepper, finely chopped
- 2 lb2 lb2 lb Frozen Corn
- 10 oz10 oz10 oz Green Chilies
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into ½” cubes

- 0.5 lb0.5 lb0.5 lb oven-baked bacon (click for recipe), finely chopped
- 1/2 cup1/2 cup1/2 cup Cilantro, finely chopped
- 3-4 cups3-4 cups3-4 cups Chicken Broth

- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 2 Tbsp2 Tbsp2 Tbsp Taco Seasoning

- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 1/2 cup1/2 cup1/2 cup Cotija Cheese, or queso fresco
- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- 1/4 cup1/4 cup1/4 cup Jalapeño Botana Sauce - Siete Foods, optional

- 2 cups2 cups2 cups Cornmilk - Maizly

- 3-4 Tbsp3-4 Tbsp3-4 Tbsp Arrowroot Flour, mixed in a little bit of water to create a slurry

- Jalapeño Pepper
- Cilantro
- Cotija Cheese, or queso fresco
- Traditional Tortilla Chips - Masa, or corn tortilla chips of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large dutch oven, saute peppers, onions, & jalapeños until tender.
- add in corn & green chiles; lightly saute.
- add in chicken thighs, bacon, cilantro, broth, lime juice, & taco seasoning.
- simmer until chicken is cooked through.
- in a food processor or using an immersion blender, blend together greek yogurt, cotija or queso fresco, nutritional yeast, & optional jalapeño hot sauce.
- in a bowl, combine corn milk, starch slurry, & pureed greek yogurt mixture.
- add in creamy mixture; simmer on low until starts to thicken (don’t overcook!)
- garnish with extra bacon, jalapeños, cilantro, cheese, & of course your favorite corn tortilla chips!
