Strawberry Banana Bread
This strawberry banana bread is made with almond flour, ripe bananas and fresh strawberries. It's moist and tender, plus paleo and gluten free!
Ingredients
- 1 cup1 cup1 cup Banana, mashed (245g)
- 3 whole3 whole3 whole Eggs
- 1 Tbsp1 Tbsp1 Tbsp Raw Honey
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 cups2 cups2 cups Almond Flour, (180g)

- 0.5 cup0.5 cup0.5 cup Arrowroot Flour, (42g) may sub with tapioca starch/flour
- 0.75 tsp0.75 tsp0.75 tsp Baking Soda
- 0.5 tsp0.5 tsp0.5 tsp Salt

- 1.5 cups1.5 cups1.5 cups Strawberries, chopped (205g)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees F. Line an 8" x 4" baking pan with parchment paper, set aside.
- In a medium-sized mixing bowl, whisk together mashed banana, eggs, honey and vanilla.
- Add in almond flour, arrowroot starch, baking soda and salt. Mix until well combined.
- Fold the chopped strawberries into the batter.
- Pour the batter into your lined baking pan.
- Place pan in oven and bake at 350 degrees for 50-55 minutes.
- Remove loaf from oven, cool 10 minutes in the baking pan, then transfer to a wire cooling rack.
- Cool to room temperature, slice and store in fridge up to one week.
