Soy-free Chicken Teriyaki Kale Salad
A healthy soy-free chicken teriyaki kale salad made with tender massaged lacinato kale leaves and a flavorful Asian inspired dressing. The perfect, healthy kale salad to prep for lunches or a quick weeknight meal.
Ingredients
Kale Salad
- 5 cup5 cup5 cup Lacinato Kale, stems removed and chopped
- 2 tsp2 tsp2 tsp Extra Virgin Olive Oil, for massaging the kale

- 1 whole1 whole1 whole Red Bell Pepper, cored and diced
- 2 cups2 cups2 cups Red Cabbage, sliced
- 3 whole3 whole3 whole Radish, sliced
- 2 whole2 whole2 whole Carrots, sliced
- 0.5 cup0.5 cup0.5 cup Green Onion (Scallion), sliced

- 0.5 cup0.5 cup0.5 cup Cashews, Raw, chopped

- 3 tsp3 tsp3 tsp Sesame Seeds, optional
Dressing
- 0.25 cup0.25 cup0.25 cup Coconut Aminos

- 1 tsp1 tsp1 tsp Toasted Sesame Oil
- 0.25 cup0.25 cup0.25 cup Lime Juice, freshly squeezed
- 1 clove1 clove1 clove Garlic, minced

- 5 Tbsp5 Tbsp5 Tbsp Extra Virgin Olive Oil

- 2 tsp2 tsp2 tsp Honey

- 0.25 cup0.25 cup0.25 cup Cilantro, chopped
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

Teriyaki Chicken
- 1 lb1 lb1 lb Chicken Breast, cubed

- 1 tsp1 tsp1 tsp Sea Salt

- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil

- 0.25 cup0.25 cup0.25 cup Soy-Free Teriyaki Sauce - Thrive Market, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl add the chopped lacinato kale and two teaspoons of olive oil and use your hands to massage the leaves until tender. Approximately 1-2 minutes.
- Add the remaining salad ingredients to the kale and toss to combine. Set aside.
- Add all the dressing ingredients to a jar with a lid and shake to combine. Set aside.
- Cut the chicken into 1-2 inch cubes and pat dry with a paper towel. Sprinkle with salt.
- Heat a large skillet to medium-high heat and once hot add the avocado oil. Sear the chicken 1-2 minutes a side or until browned and cooked through. Remove from the skillet and toss with teriyaki sauce, if using.
- Toss the salad with half the dressing and divide among bowls. Top with chicken and serve immediately.
