2 Ingredient Spiced Munchkins
2 ingredient recipe?! Say no more, am I right?! I have been making these 2 ingredient spice munchkins for years because they are super easy, and super delicious. They also contain a whole can of pumpkin, so they are sweet while having some nutritional benefits. The texture is also so lovely - all in one, they are somehow chewy, dense, light and fluffy. A dream! I imagine you can definitely make this with other cake mixes as well. If you try that, or these, let me know!
Ingredients
- 15 oz15 oz15 oz Spice Cake Mix, I used Duncan Hines brand
- 15 oz15 oz15 oz Pumpkin Purée, canned
- 1 Tbsp1 Tbsp1 Tbsp Powdered Sugar

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 375f.
- Add the whole box of spice cake mix and a whole can of pumpkin to a bowl.
- Using a spatula, fold the pumpkin into the mix. This may take a couple minutes and it will be thick, but comes together (see photo).
- Spray a mini muffin tin with spray oil.
- Using a 1tbsp measuring spoon, or a cookie scoop, transfer dough into each crevice.
- Bake for 15 minutes.
- Once finished, transfer to a wire cooling rack.
- Once cooled, top with powdered sugar.
