Zucchini is in peak season right now so run and go make these Zucchini fries. All you need is 5-ish ingredients and 10-15 mins of hands on time. Enjoy them as a snack, appetizer or side dish. They are incredibly fun and popular with the kiddos as well. Serve them alongside some Ranch (make sure it is Whole30 compatible if you are on a round) and get dipping! These Zucchini fries are Vegetarian, Dairy-free, Gluten-free and Whole30 compatible.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Sliced the Zucchini lengthwise into fries/ wedges.
  2. Line a baking tray with parchment paper.
  3. Preheat the oven at 425°F.
  4. Set up 3 low bowls - one with Arrowroot starch, one with beaten egg and one with Almond flour.
  5. To the bowl with Almond flour, add Italian seasoning and crushed red pepper flakes to season (optional, but recommended).
  6. Then working in batches, dip the Zucchini first in Arrowroot starch, then the beaten egg and lastly in the Almond flour seasoning.
  7. Place them on the lined baking tray, spray them with some Avocado Oil and bake them at 425°F for about 25-30 mins or until they were golden brown.
  8. Serve them with a side of Ranch for dipping. Enjoy!
