Almond Puff Pastries
There’s a local bakery in town that makes the most amazing almond croissant pastries—bear claws—and I can’t get enough of them! This recipe is my simplified take on those dreamy almond croissants, using buttery, flaky puff pastry and a sweet almond filling. They’re easy to make and use all the same flavors as a beloved almond croissant. Provecho amigos!
Ingredients
- 1 whole1 whole1 whole Puff Pastry, 1 sheet, can sub for GF Puff Pastry
- .5 cup.5 cup.5 cup Almond Paste
- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted, softened
- 2.5 Tbsp2.5 Tbsp2.5 Tbsp Granulated White Sugar
- 2 whole2 whole2 whole Egg
- 0.5 tsp0.5 tsp0.5 tsp Almond Extract
- 1 tsp1 tsp1 tsp Real Salt - Redmond
- 0.25 cup0.25 cup0.25 cup Almonds, Sliced
- 1 Tbsp1 Tbsp1 Tbsp Powdered Sugar, for dusting
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 375F. Roll out the puff pastry and cut into four-inch squares (roughly 6-8 squares per sheet).
- In a bowl, finely crumble the almond paste into small pieces.
- Add butter, 2 tbsp sugar, one egg, almond extract, and a pinch of salt.
- Beat with a hand mixer until smooth. NOTE: The texture should be thick, but spreadable.
- Spoon 1.5-2 tbsp of the almond filling over the puff pastry square. I used a resealable sandwich bag as a piping bag instead of spooning the mixture and left about an inch gap around the border.
- Beat the remaining egg in a small bowl and brush the edges of the pastry squares with the egg wash.
- Sprinkle the remaining sugar plus the sliced almonds over the top of the pastries.
- Bake for 18-20 minutes, or until golden brown and puffed.
- Let cool for 15-20 minutes, dust with powdered sugar before serving. Provecho amigos!
