Apple Cinnamon Crumb Muffins

- 1 cup1 cup1 cup Applesauce, Unsweetened
- 0.5 cup0.5 cup0.5 cup Pure Maple Syrup

- 0.333 cup0.333 cup0.333 cup Avocado Oil

- 2 whole2 whole2 whole Eggs
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 2 Tbsp2 Tbsp2 Tbsp Milk

- 0.333 cup0.333 cup0.333 cup Light Brown Sugar, Or coconut sugar
- 1 tsp1 tsp1 tsp Cinnamon, Ceylon

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium sized mixing bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a small bowl, whisk applesauce, maple syrup, oil, eggs, vanilla, and milk until smooth.
- Pour wet ingredients into dry and fold gently until just combined.
- Spray muffin pan with avocado oil or use non-bleached muffin cups. Divide batter into muffin cups, about ¾ full.
- Crumble topping: Mix flour, brown sugar, cinnamon, and salt. Add butter and blend with a fork or fingers until evenly crumbly, soft, clumpy bits that hold together when pinched.
- Add crumble evenly to muffins and lightly pat down so it sticks to batter.
- Bake at 425°F for 5 minutes. Without opening the oven, reduce to 350°F and bake 12–13 minutes more.
- Cool in the pan for 5–10 minutes, and enjoy!!
Notes
Gluten-free swaps: 1:1 gluten-free flour. For GF floyr, check muffins around 11-12 minutes. Dairy-free swaps: use any no-dairy milk. For crumble, use vegan butter or coconut oil.
