Avocado Cilantro Dressing
When I die I want to be buried in this dressing – okay, okay, maybe that is a tad bit dramatic but this dressing is truly one of the best things I’ve ever made! It is so creamy that you wouldn't even know it does not contain a hint of dairy. Also, it is SO easy to make – the most complicated step is getting the pit out of the avocados and peeling the garlic.
Ingredients
- 222 Avocado, very ripe
- 0.5 bunch0.5 bunch0.5 bunch Cilantro
- 111 Lemon
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 0.25 cup0.25 cup0.25 cup Water
- 2 cloves2 cloves2 cloves Garlic
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 0.25 tsp0.25 tsp0.25 tsp Red Pepper Flakes, or more if you want a kick!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prep ingredients to be placed in the food processor.
- Blend until desired consistency is met. For a thicker dressing, you can skip the water. For a thinner dressing, gradually add more water until desired consistency is reached.
Notes
*I know that many people out there have the misfortune of thinking that cilantro tastes like soap but don’t let this recipe scare you. It is alright to not include the cilantro.
