Award-Winning Dark Chocolate Pudding (Vegan, Top 8 Free)
A rich & decadent-tasting dark chocolate pudding that’s only 5 ingredients with only 10 minutes of prep time! Aquafaba, the liquid from a can of chick peas - whipped until stiff peaks form - helps give the luscious texture to this heavenly pudding. I promise, there is zero flavor of chick peas, just delicious chocolate! Ingredients
- 0.666 cup0.666 cup0.666 cup Aquafaba, Reserve the liquid from one 15.5oz can of chick peas; reserve chicken peas for another use (do not use low or no-sodium)
- 8 oz8 oz8 oz Hummus, *Use 8oz container of dark chocolate hummus
- 3 Tbsp3 Tbsp3 Tbsp Cocoa Powder
- 3 Tbsp3 Tbsp3 Tbsp Powdered Sugar, I used organic
- 1 tsp1 tsp1 tsp Cornstarch
- 8 Tbsp8 Tbsp8 Tbsp Whipped Cream, I used dairy-free; optional
- 4 pieces4 pieces4 pieces Pascha 70% Cacao Organic Vegan Dark Chocolate Bar, Chopped; optional

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the Aquafaba (reserved liquid from the can of chick peas) to a large mixing bowl. Use handheld electric mixer on high speed to beat until stiff peaks form (it should resemble whipped cream); about 2-3 minutes.
- Add dark chocolate hummus, cocoa powder, and powdered sugar. Beat until combined, scraping sides of bowl, as needed; about 1-2 minutes.
- Beat in cornstarch until combined; about 30-60 seconds.
- Spoon mixture into 4 ramekins or small bowls. Refrigerate at least 2 hours before serving. Top with whipped cream & dark chocolate shavings right before serving.
Notes
When you separate the liquid (Aquafaba) from the can of chick peas, it should be 2/3 cup, however if it is slightly more or slightly less than 2/3 cup, this is ok too.
