Back To School Tater Tacos
Taco Tuesday - But let's not overcomplicate things. Creamy beans, seasoned & roasted taters, and a combination of quick garnishes are all it takes for delish tacos that couldn't be easier.
Ingredients
- 8 whole8 whole8 whole Corn Tortilla, Standard taco sized

- 440 ml440 ml440 ml Refried Beans, Refried black beans with chilis

- 2 whole2 whole2 whole Yellow Potatoes, peeled & chopped approx 1/2" cubes
- 1 whole1 whole1 whole Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Tex Mex Seasoning
- 1 tsp1 tsp1 tsp Meat & Potatoes Seasoning - Primal Palate

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Kashmiri Chili Powder

- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried

- 1 whole1 whole1 whole Himalayan Pink Salt

- 0.5 whole0.5 whole0.5 whole Yellow Onion, small onion, diced
- 1 whole1 whole1 whole Pickled Onions, See Notes for Recipe
- 1 whole1 whole1 whole Cilantro, chopped fresh for garnish
- 1 whole1 whole1 whole Feta Cheese, crumbled for garnish
- 1 whole1 whole1 whole Creamy Baja Sauce - Taco Bell
- 1 whole1 whole1 whole Hot Sauce, I love Valentina Super Hot

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Empty the refried beans into a small covered pot set to medium low. Stir as needed and once heated, reduce to low and leave covered.
- Preheat your oven to 400 F. Get your taters into a mixing bowl and give them a good drizzle of EVOO. Toss them to coat before adding your Tex Mex, Kashmiri, Meat & Potatoes Seasoning, Garlic Powder & Dried Oregano. Toss once again until all of your taters are seasoned. Transfer the seasoned taters to a parchment lined tray in a single layer & season liberally with salt. Once your oven is preheated, add your taters to the oven and bake for 15 minutes. Carefully flip and return to the oven for another 12 - 15 minutes until tender with some slight charring / crisp action. Season the tray with a good pinch of salt.
- To assemble, you need to warm up your tortillas. You can do so on a grill pan / frying pan, or by wrapping in paper towel and microwaving until malleable. Once your tortillas are ready, start by smearing a generous amount of refried beans on your tortillas followed by a drizzle of the Baja sauce. Spoon some roasted taters on next followed by a sprinkle of diced onions, some pickled onions, crumbled feta, a few dashes of hot sauce, and some chopped cilantro.

Notes
- Servings will vary based on the size of your taters and the amount of taters you add to each taco. You could get anywhere from 7 - 10 tacos approximately.
