Cucumber Feta Salad
I have a bad habit of always buying my "staple veggies" without ever checking my fridge. So, I ended up with far too many cukes and whipped this yummy, fresh salad up. Cukes, onions, feta, parsley, a little heat, and my fave Greek dressing.
Ingredients
- 2 whole2 whole2 whole English Cucumber
- 0.5 whole0.5 whole0.5 whole Red Onion, thinly sliced
- 0.5 cup0.5 cup0.5 cup Parsley, chopped

- 100 grams100 grams100 grams Feta Cheese, crumbled into the salad
- 0.5 tsp0.5 tsp0.5 tsp Red Pepper Flakes

- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried

- 0.333 cup0.333 cup0.333 cup Greek Salad Dressing, Up to 1/2 C + If needed. I used Le Grec, it's my absolute fave!
- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, To Taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Using a mandolin set to the thinnest setting, carefully sliced your washed cucumbers until both are sliced up. Get them into a mixing bowl and then pile on your red onion, parsley, feta, pep flakes, oregano, and some cracked pepper. Start with 1/3 cup dressing, toss, and if needed, add additional dressing up to 1/2 C until the salad is dressed to your liking. You can also add salt, but I didn't feel it was necessary.
- Cover and refrigerate for 30 minutes prior to serving to let the dressing soak into those cukes.
- Transfer to a serving bowl and ENJOY!
- Any leftover salad can be stored in an airtight container for up to 3 days. Further than 3 days, the salad starts to look sad.
