bacon wrapped water chestnuts – rumaki style
have you ever heard of rumaki? nope? lol… same 😂
BUT the second I discovered bacon-wrapped water chestnuts (& then learned classic rumaki = bacon-wrapped chicken livers), I was immediately sold. organ meats + bacon = elite combo 🥓✨
this is a rumaki-style spin: crunchy water chestnuts + an ancestral meat stick with organ blend for an easy nutrient boost, a thick wrap of bacon & everything glazed in my homemade gluten-free teriyaki sauce 🤌
sweet-savory, crispy, juicy, & surprisingly nutrient-dense — basically the most delicious way to sneak liver into a crowd-pleasing appetizer!
Ingredients
- 1 lb1 lb1 lb Water Chestnuts, whole, drained
- Ancestral Beef Stick - Archer Jerky, diced - optional for rumaki style

- 1 lb1 lb1 lb Sliced Fresh Side Pork Bacon (DIY Bacon) - US Wellness Meats

- gluten-free teriyaki sauce (click for recipe)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- drain water chestnuts, then pat dry.
- optional: dice ancestral meat stick, then smash on top of each water chestnut.
- cut bacon slices into ~2” chunks
- wrap each water chestnut with bacon, then secure with a toothpick.
- make a batch of my gluten-free teriyaki sauce, then brush & coat each bite.
- place on a baking sheet, then bake for 60-75 minutes or until bacon is nice & crispy.
- serve with additional sauce & enjoy!
