Bird Family Frittata
My aunt Bonnie owned a bed and breakfast and she made this for her guests. She says it was adapted from my aunt Linda from back in the South Beach Diet days!
Ingredients
- 8 whole8 whole8 whole Eggs, Pastured
- 1 cup1 cup1 cup Cottage Cheese
- 1 cup1 cup1 cup Italian Blended Cheese, Any cheese you’d like, shredded
- 1 tsp1 tsp1 tsp Sea Salt

- 1 tsp1 tsp1 tsp Oregano, Dried

- 8 oz8 oz8 oz Frozen Spinach, Drained
- 0.25 whole0.25 whole0.25 whole Red Onion, Large
- 0.5 lb0.5 lb0.5 lb Breakfast Sausage, Cooked, Diced ham is great too

- 2 whole2 whole2 whole Roasted Red Pepper, Diced
- 0.25 cup0.25 cup0.25 cup Chives, Fresh, chopped, green onions work too

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 325F
- Butter pie pan
- Mix ingredients until just combined (saving chives for later)
- Pour into pie pan
- Top generously with fresh chopped chives
- Begin checking at 30 mins. Once eggs are set (not jiggling in middle) remove and let cool 5 mins before serving. If it’s still really jiggly in middle up temp to 350F. If it’s browning more than your preference, use foil around the edges. Enjoy! Reheats well.
Notes
This recipe is easy to play with! Sometimes I do feta and tomatoes. Sometimes I leave out the spinach and do broccoli!!
