These fun birthday cake cookies are chewy, filled with sprinkles and bursts of white chocolate chunks, as well as incredibly decadent! These cookies are definitely a mini party in your mouth!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Beat the butter and both sugars until smooth.
  2. While the mixer is still on, add the eggs one at a time as well as the vanilla and almond extracts.
  3. Once the wet ingredients are fully mixed, add all dry ingredients and stir or mix on low until fully combined.
  4. Stir in the chocolate chunks and sprinkles.
  5. To scoop the dough, I use a small ice cream scooper about the size of a tablespoon and scoop two balls into my hands and roll it into one. Place the dough balls into a prepared baking pan, making sure to leave about 2 inches of space between the cookies on either side.
  6. Bake at 375 degrees Fahrenheit for 10 minutes. You will notice the middle will seem very soft and almost raw. Let the cookies cool completely on the pan as they will continue to cook and set perfectly.
