Black Bean Avocado Dip (Edit recipe)

Over the last year, we began reintroducing beans and corn with great results. Which is why I’m so excited to make and share this recipe since we haven’t enjoyed it in over a decade. A family friend shared this with us on a trip to Reno, where we were visiting for a volleyball tournament. The memories of sitting around enjoying this as a family after a long day of watching volleyball games came rushing right back.

Ingredients

  • 30 oz Black Beans, 2 - 15 oz cans organic black beans, drained & rinsed well
  • 15 oz Sweet Corn, 1 - 15 oz can
  • 1 - 2 whole Avocado, ripe, peeled & diced
  • .75 - 1 cup Roma Tomato, diced or more depending on preference
  • .75 - 1 cup Red Onion, diced or more depending on preference
  • .75 - 1 cup Green Onion (Scallion), trimmed & ¼“ slices of green & white
  • 1 whole Jalapeño, seeded & deveined, finely chopped
  • .25 - .5 cup Cilantro, roughly chopped or more depending on preference
  • 1.5 tsp Ground Cumin
  • 1.5 tsp Sea Salt
  • 1 tsp Sumac, optional
  • .5 tsp Chipotle Powder, optional
  • .5 tsp Black Pepper
  • 2 Tbsp Avocado Oil
  • 3 whole Lime Juice, you'll need approx 6-8 tbsp depending on preference
  • 2 - 3 Tbsp Cotija Cheese, crumbled, optional garnish

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add beans, corn, avocado, tomatoes, onions (green and red), jalapeno and cilantro to a large mixing bowl. Sprinkle on the spices, then add the avocado oil and lime juice.
  2. Using a large spatula, stir gently (so you don’t mash up the avocado) to fully combine. Taste and adjust with additional salt and/or lime juice as needed.
  3. Give it one final mix, top with cotija cheese and additional cilantro as desired.
  4. Serve with chips of choice. Our favorites are the Siete Foods Totopos Corn Chips, any of the flavors!

Notes

This is not rocket science in terms of prep, but I do have a couple preferences. With beans, at least for us, I always try to use organic and rinse them well. Corn, organic is also a must, which is why the Siete corn chips are an easy choice for us. The amount of lime juice is totally up to you, we like it pretty “limey” so adjust as needed for your personal preference
