Blacked Eyed Pea Soup
This soup is traditionally served on New Year's Day, but it is a staple in our home anytime of the year!
Ingredients
- 1 cup1 cup1 cup Black Eyed Peas, Dried
- 1 lb1 lb1 lb Italian Sausage, Hot

- 8 oz8 oz8 oz Bacon, Pork

- 111 Red Onion, Diced
- 555 Garlic, Cloves

- 4 cups4 cups4 cups Chicken Bone Broth

- 0.5 tsp0.5 tsp0.5 tsp Black Peppercorns, Ground Fresh

- 1 tsp1 tsp1 tsp Salt

- 444 Carrots, Chopped
- 555 Celery, Ribs, chopped
- 22 oz22 oz22 oz Organic Crushed Tomatoes - Bionaturae

- 3 cups3 cups3 cups Baby Spinach, Or Power Greens

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook dried beans according to the package
- Cut up bacon and cook in a large dutch oven
- Remove bacon and set aside. Drain excess bacon fat (I keep mine in a mason jar for cooking)
- Cook sausage until brown
- Add carrot, onion, garlic, and celery
- Cook until veggies are soft
- Add salt and pepper, broth, beans, crushed tomatoes, and bacon
- Simmer, covered, for 2 hours
- Add greens in and cover for another minute
- Enjoy!
