Boursin Tomato Crostini
Any time I'm at the grocery store and they put out the fresh baguettes, I HAVE to snatch one up. I whipped up these little snacks and they were so quick and delish. Garlicky grilled baguette, creamy Boursin, campari tomatoes, herbs, chili oil & pecorino. Quick to make and watch them disappear just as quickly!
Ingredients
- 8 pieces8 pieces8 pieces Baguette, from a 235g French Baguette
- 1 whole1 whole1 whole Extra Virgin Olive Oil
- 1 clove1 clove1 clove Garlic, lightly smashed & peeled

- 150 grams150 grams150 grams Shallot & Chive Cheese - Boursin
- 4 whole4 whole4 whole Tomato, I used Campari Tomatoes
- 4 pieces4 pieces4 pieces Basil, Fresh, rolled & thinly sliced

- 1 whole1 whole1 whole Pea Shoots, trimmed for garnish
- 1 whole1 whole1 whole Chili Infused Olive Oil
- 1 whole1 whole1 whole Pecorino Romano, finely shredded for garnish
- 1 whole1 whole1 whole Red Pepper Flakes, See Recipe

- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, See Recipe

- 1 whole1 whole1 whole Himalayan Pink Salt, See Recipe

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a grill pan to just below medium and in the meantime, brush both sides of your crostini with EVOO and place them on the grill. Grill until golden and crisp, flip, rub the grilled sides with your raw garlic, and continue until the second side is nice & golden. Remove them form the grill and get them onto a cutting board. Rub the second side with your garlic clove.
- Smear creamy Boursin onto each of your crostini followed by two slices of your campari tomatoes. Season with a pinch of pepper flakes, salt & cracked pepper. Give your crostini a light drizzle of chili oil followed by as much finely shredded pecorino as your heart desires. Finish with some fresh basil & pea shoots, serve & ENJOY!
- You can easily double this recipe given you'll have enough Boursin & baguette should you want to make more of them.
Notes
- Servings are a hard one on this one because I managed to eat like, 6 of them myself. With that being said, for a little snack, 2 per person is good.
