Ingredients
meat & beans
- 2 lb2 lb2 lb Chicken Sausage, use any ground meat or sausage

- 15 oz15 oz15 oz Black Beans, drained & rinsed

- 15 oz15 oz15 oz Vegan Charro Beans - Siete Foods

- 1 lb1 lb1 lb easy baked bacon (click for recipe)
- 1 Tbsp1 Tbsp1 Tbsp Taco Seasoning - Primal Palate, or any seasoning blend you like

- 0.25 cup0.25 cup0.25 cup Water
eggs
- 18 - 2018 - 2018 - 20 Eggs
- 1 cup1 cup1 cup Cottage Cheese
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Nutritional Yeast

- 1 tsp1 tsp1 tsp Salt and Pepper
assembling burritos
- 18 - 2018 - 2018 - 20 Cassava Flour Tortillas - Burrito Size - Siete Foods, any GF burrito sized tortilla
- 12 - 8 oz12 - 8 oz12 - 8 oz Cheddar Cheese, or shredded cheese of choice

- sautéed frozen vegetables (click for recipe), optional

- Salsa, for serving, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
meat & bean mixture
- to a large skillet, brown meat of choice; drain once cooked.
- stir in bacon, beans, seasoning, & water; simmer for ~10 minutes.
- use a measuring cup to see how much yields - probably around 8 cups.
eggs
- in a food processor, add all ingredients for eggs.
- lightly clean out large skillet from above, then add eggs & cook on low heat.
- stir frequently until produces nice fluffy scrambled eggs.
- use a measuring cup to see how much yields - probably around 6 cups.
assembling burritos
- get out remaining ingredients, then start your assembly line with burritos: tortilla (lightly heat to make more pliable) → a heaping ⅓ cup of meat & bean mixture → ⅓ cup scrambled eggs → handful of cheese + other add-ins you like → roll into a burrito.
- after rolling into a burrito, roll & secure with wax paper.
- set on a sheet pan & freeze. once frozen transfer to a zip-lock bag.
- pull out night before & reheat in the microwave.
- serve with salsa or hot sauce & enjoy!
