Breakfast Pesto Egg Bake
If you are looking for a high protein and veggie forward breakfast to meal prep for the week or feed friends for a brunch, this is the recipe for you. The pesto flavor is an amazing switch up if you are getting tired of boring eggs!
Ingredients
- 10 whole10 whole10 whole Egg
- 0.5 cup0.5 cup0.5 cup Egg Whites
- 1 cup1 cup1 cup Milk, of choice

- 2 Tbsp2 Tbsp2 Tbsp Basil Pesto
- 1 pinch1 pinch1 pinch Black Pepper

- 1 pinch1 pinch1 pinch Sea Salt

- 0.25 cup0.25 cup0.25 cup Onion, diced
- 0.5 cup0.5 cup0.5 cup Tomato, Cherry, halved

- 2 cup2 cup2 cup Baby Spinach, chopped
- 8 pieces8 pieces8 pieces Turkey Bacon, chopped
- 0.25 Tbsp0.25 Tbsp0.25 Tbsp Thrive Market Organic Extra Virgin Olive Oil Spray, or spray for coating the pan

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Preheat the oven to 375 degrees Fahrenheit
- 2. In a large bowl, whisk together eggs, egg whites, milk, pesto, salt and pepper until smooth
- 3. Stir in veggies and turkey bacon. Option to mix in cheese as well!
- 4. Spray/coat a 13x9 pan with olive oil
- 5. Add the breakfast bake mixture into the 13x9 pan and bake for 35-40 minutes, or until it is completely set
- 6. Let cool before cutting.
- 7. Pair with your favorite toast and fruit!
Notes
Typically this makes 10 slices, 2 per serving. Change to whatever your personal serving size is!
