buffalo chicken & pickle pizza lunchable
taking it back to the OG pizza lunchables… but with a spicy, protein-packed glow-up. 🍕✨ my mini grain-free simple mills crusts get topped with a creamy cottage cheese buffalo ranch sauce, then stacked with the the new primal's buffalo chicken stick, bacon, pickles + cheese.
all the fun of the lunchables we grew up with—just with a high-protein twist. 🙌
and of course… no lunchable is ever complete without the sweet treat. 😉
Ingredients
mini “naan” pizza crusts
- 9.8 oz9.8 oz9.8 oz Almond Flour Pizza Dough Baking Mix - Simple Mills, 1 box
- 1 Tbsp1 Tbsp1 Tbsp Psyllium Husk, Ground

- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar
- 4 - 6 Tbsp4 - 6 Tbsp4 - 6 Tbsp Water
creamy buffalo ranch sauce
- 1 cup1 cup1 cup Cottage Cheese
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Dill Pickle Juice

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Organic Garden Ranch Seasoning Mix - Primal Palate

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- Buffalo Style Chicken Meat Sticks - New Primal, diced

- easy baked bacon (click for recipe), diced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
mini “naan” pizza crusts
- preheat oven to 375.
- in a large bowl, combine pizza crust mix & psyllium husk.
- in a separate bowl, whisk together greek yogurt, ACV, & water.
- add liquid ingredients to dry & create into a dough; add any additional water as needed.
- cut dough into ~20 pieces, then flatten out into round little discs.
- bake for 12-15 minutes (flipping at about 8-10 minutes) or until golden brown on top.
creamy buffalo ranch sauce
- add all ingredients, to a food processor or use an immersion blender & blend.
- remove from heat & allow to cool.
- add sauce + cottage cheese & nutritional yeast to a food processor & blend.
building your lunchable
- to a lunch box, add: mini “naan” pizza crusts. a container of creamy buffalo ranch sauce. buffalo chicken meat stick & bacon, shredded cheese of choice, pickles, & any other additional toppings or sides
- when ready to eat, layer sauce, meat, cheese, & pickles onto the crust. enjoy cold, or warm briefly in the microwave or under a broiler.
- make sure to serve with a sweet little treat!
