Exactly what you need on a cold winter day & perfect if you’re starting to feel a tad under-the-weather, this easy, heartwarming soup instantly makes you feel better. Perhaps it’s the ground turmeric, the red curry powder, and all that deliciously-roasted butternut squash that gets puréed into this luscious ‘magic elixir’ wellness soup.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 375°.
  2. Place butternut squash in a single layer on a large, rimmed sheet pan. Coat with 3 Tbsp olive oil. Sprinkle with 1/2 Tsp salt. Roast on middle rack of oven for 30 minutes, or until fork tender.
  3. Add remaining 3 Tbsp olive oil to large soup pot over medium heat. Add onions and garlic, stirring occasionally for 2-3 minutes. Stir in remaining 3/4 Tsp salt. After additional 2-3 minutes, stir in turmeric and red curry powder.
  4. Once squash is roasted, add to soup pot. Add broth; cover pot. Set timer for 10 minutes.
  5. Use handheld immersion blender to purée soup until completely smooth. Serve with crusty bread for dipping. Garnish as desired.

Notes
