Cajun Chicken Pasta
I lived in the south for over a decade. If you know you know..the Cajun food is amazing! The flavors are a blend of many cultures and influences - and the end result is beyond tasty. I love that Cajun food is full of flavor but is not full of intense heat. This dish blends all the yummy things. Enjoy
Ingredients
- 16 oz16 oz16 oz Penne Pasta, Jovial GF is my favorite
- 3 pieces3 pieces3 pieces Boneless Skinless Chicken Breasts, Diced, about 1.5 lbs
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 2 tsp2 tsp2 tsp Cajun Seasoning
- 1 Tbsp1 Tbsp1 Tbsp Ghee
- 1 whole1 whole1 whole Bell Pepper, Diced, any color
- .5 whole.5 whole.5 whole Onion, Diced
- 2 cloves2 cloves2 cloves Garlic, Minced
- 1 cup1 cup1 cup Whole Milk, Or half-n-half
- 1 cup1 cup1 cup Rosa Alfredo Sauce
- 1 cup1 cup1 cup Parmesan Cheese, Grated
- 1 tsp1 tsp1 tsp Sea Salt
- .5 tsp.5 tsp.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare pasta according to package.
- In a large pot cook the chicken, salt, pepper, in avocado oil on medium heat for about 8 minutes, until done.
- Add the Cajun seasoning, ghee, bell pepper, onion, garlic then stir and let cook for 10 minutes.
- Add the milk and Alfredo sauce, stir and turn heat to low, let cook for 3-4 minutes.
- Add the cheese and let melt.
- Add the cooked pasta to the pot and stir to combine.
Notes
You can use regular Alfredo sauce if you can’t find the Rosa style. You can add diced zucchini or tomatoes to increase the vegetable content. Top with scallions if you like.
