Ingredients
balsamic reduction
- 0.5 cup0.5 cup0.5 cup Fig Balsamic Vinegar - Kosterina, or regular balsamic vinegar

- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 0.25 cup0.25 cup0.25 cup Water, as needed
meat
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Bacon Grease, or fat of choice
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/2" pieces

- 1 Tbsp1 Tbsp1 Tbsp Amore [Italian] Seasoning - Primal Palate

- 2 Tbsp2 Tbsp2 Tbsp Balsamic Vinegar

- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Water
for serving
- Beef Tallow Potato Chips, Classic - Vandy, any flavor or sub seed-oil free tortilla chips
- Mozzarella Cheese, or pepper jack
- Tomato, Cherry, sliced

- Avocado, sliced
- Basil, Fresh

- Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- prepare balsamic reduction, by whisking together vinegar & sweetener.
- bring the mixture to a boil, then reduce to a simmer for 8-10 minutes to allow to thicken.
- remove from heat & allow to thicken while cooking remaining ingredients - add water if becomes too thick.
- in a large skillet, add fat of choice & melt.
- in a bowl, mix together chicken thighs & amore seasoning.
- add in chicken thighs to skillet; cook for 6-8 minutes; add in remaining ingredients for chicken; simmer for 5-6 minutes or until chicken is cooked through.
- to build nachos, add tortilla chips to a plate, then layer on chicken, mozzarella cheese, tomatoes, avocado, balsamic reduction, basil, & red pepper flakes.
