Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Whisk together flour, baking soda, baking powder, and salt in a bowl and set aside.
  2. 2. With an electric mixer, beat together sugars, butter, egg, cashew butter, and optionally vanilla extract.
  3. 3. On a low speed, gradually add in the flour mixture. Increase the speed and mix well until about homogeneous. Optionally, add chocolate chips or roughly chopped baking chocolate for complementary flavor and gooey texture.
  4. 4. Cover and refrigerate dough for at least 1 hour, up to 12. (Or freeze for longer term storage.)
  5. 5. Preheat oven to 375 F
  6. 6. Form chilled dough into 1 inch balls, flatten slightly, and place on baking sheets.
  7. 7. Bake until light golden brown, about 8-10 minutes.
  8. 8. Let cookies cool and enjoy!!
