Cheesy Sausage Quesadillas
I had to use up the rest of my Oaxaca cheese and tortillas, so I made some more quesadillas with Beyond Meat sausage. A little extra savoury flavour boost. Guac, salsa, Baja sauce, and colourful garnishes. Don't forget the squeeze of lime!
Ingredients
- 9 whole9 whole9 whole Corn Tortilla, Mine were approx 6"

- 1 whole1 whole1 whole Extra Virgin Olive Oil
- 3 whole3 whole3 whole Plant-Based Hot Italian Sausage - Beyond Meat
- 190 grams190 grams190 grams Oaxaca Cheese, thinly sliced
- 1 whole1 whole1 whole Guacamole, I used two individual cups from a 4 pack
- 1 whole1 whole1 whole Creamy Baja Sauce - Taco Bell
- 1 whole1 whole1 whole Salsa Verde

- 0.5 whole0.5 whole0.5 whole Red Onion, small onion, finely diced
- 1 whole1 whole1 whole Jalapeño Pepper, sliced for garnish
- 1 whole1 whole1 whole Cilantro, garnish
- 1 whole1 whole1 whole Lime, cut into wedges for service

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Begin heating a small non-stick set to just about medium. Once heated, crumble in your sausages and break them up into smaller crumbles as the sausage browns in the skillet. Browning all of the sausage won't take too long, 5 - 7 minutes. Once cooked, transfer the meat to a small plate and wipe out the skillet.
- Wrap half the tortillas in a slightly damp paper towel and heat them in the microwave until soft and malleable. About 25 - 30 ish seconds. Remove, wrap the remaining, and heat them up as well until all of your tortillas are soft. Keep them wrapped as you start assembling the quesadillas.
- Lay 3 - 4 slices of the cheese on one half of the tortilla followed by a scoop of the cooked sausage. Fold them over, flip them on your work surface and gently press them down to hold their shape. You will likely be frying them in batches.
- Return your skillet to the heat and add a couple tablespoons EVOO. Once heated, fry your first batch of quesadillas until golden, about a minute and a half or so, flip, and continue until golden. Transfer to a paper towel lined plate and continue until they're all fried up.
- Spread prepared guacamole on the tops of your quesadillas. I gave each plate a drizzle of Baja sauce before nestling 3 quesadillas down. Then, a spoon or two of green salsa, some spicy jalapenos, diced red onion, fresh cilantro, and a wedge of lime. ENJOY!
