Oaxaca Cheese & Jalapeno Quesadillas
After the most lovely week in Mexico, you'd think I'd be done with the Mexican Food, but that's hardly the case. I was so happy to spot Oaxaca cheese here. Stuffed with oaxaca cheese & jalapenos, and fried to golden. Then, it's all about those gorgeous garnishes.
Ingredients
- 9 whole9 whole9 whole Corn Tortilla, Mine were about 6"

- 1 whole1 whole1 whole Extra Virgin Olive Oil
- 190 grams190 grams190 grams Oaxaca Cheese, thinly sliced
- 1 whole1 whole1 whole Guacamole, I used 2 individual sized pre-made cups
- 2 whole2 whole2 whole Jalapeño Pepper, sliced thinly
- 1 whole1 whole1 whole Avocado, sliced for garnish
- 1 whole1 whole1 whole Green Onion (Scallion), sliced for garnish (more if needed / desired)

- 2 Tbsp2 Tbsp2 Tbsp Red Onion, finely diced for garnish. Measurement is approx.
- 1 whole1 whole1 whole Cilantro, Garnish
- 1 whole1 whole1 whole Guacamole Salsa - Herdez
- 1 whole1 whole1 whole Creamy Baja Sauce - Taco Bell
- 1 whole1 whole1 whole Lime, cut into wedges

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Begin heating some EVOO in a non-stick set to about medium heat. In the meantime, wrap half the tortillas in a slightly damp paper towel and heat them in the microwave until soft and malleable. About 25 - 30 ish seconds. Remove, wrap the remaining, and heat them up as well until all of your tortillas are soft. Keep them wrapped as you start assembling the quesadillas.
- Lay three to four thin slices of Oaxaca cheese on one half of the tortillas followed by two - three slices of jalapeno. Fold them over, press them down gently, and flip them over. This should help keep their shape as you start frying them.
- Working in batches, fry the quesadillas in your skillet for a minute and a half or so until golden, flip, and continue until cheese is bubbly and melty. Transfer to a paper towel lined plate and continue until all of your quesadillas are fried up.
- For service, I started by drizzling some Baja sauce on the bottom of my plates. Then, I smeared some prepared guacamole on the quesadillas and nestled three of them per serving on to the saucy plate. A drizzle of spicy guacamole salsa, a sprinkle of red & green onions, a couple slices of avo, some fresh cilantro, and a lime wedge.
