Chicken and Rice Casserole
This dish is so easy to throw together on those very busy weeknights! It's loaded with the BEST flavor that the whole family will absolutely devour. If you're planning to make my slow cooker whole chicken, this is the perfect recipe to use that in. ENJOY!
Ingredients
- 2 cups2 cups2 cups Brown Rice, Cooked According to Package Instructions

- 3 cups3 cups3 cups Rotisserie Chicken

- 1 cup1 cup1 cup Corn
- 0.333 cup0.333 cup0.333 cup Bell Pepper, Diced
- 0.333 cup0.333 cup0.333 cup Onion, Diced
- 1 Tbsp1 Tbsp1 Tbsp Chili Powder
- 0.5 tsp0.5 tsp0.5 tsp Paprika

- 1 tsp1 tsp1 tsp Himalayan Pink Salt

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Onion Powder

- 1.5 tsp1.5 tsp1.5 tsp Cumin, Ground

- 0.25 cup0.25 cup0.25 cup Sour Cream
- 0.25 cup0.25 cup0.25 cup Heavy Whipping Cream
- 1.5 cup1.5 cup1.5 cup Cheddar Cheese, Shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium sized mixing bowl add the chili powder, paprika, salt, garlic powder, onion powder, and cumin. Mix until fully combined.
- Add the sour cream and the heavy whipping cream to the seasoning. Mix until fully combined.
- Add the chicken and mix until the chicken is evenly coated.
- In a large bowl add the rice, corn, peppers, and onion. Mix well.
- Add the chicken to the rice and mix until fully combined.
- Add the chicken mixture to a medium sized backing dish.
- Top with the shredded cheese.
- Bake at 375 for 35 – 40 minutes.
- Serve with tortilla chips, veggies, salsa, guacamole, and sour cream.
