Chicken Noodle Hidden Veggie Soup
if you are looking for the ultimate chicken noodle soup, I have just the one for you! the best part is your kids won't even know its loaded with veggies!
Ingredients
- 6 whole6 whole6 whole Chicken Leg Quarter
- 6 whole6 whole6 whole Carrots
- 6 whole6 whole6 whole Celery
- 2 whole2 whole2 whole Onion
- 4 cloves4 cloves4 cloves Garlic
- 0.25 cup0.25 cup0.25 cup Acini di Pepe Pasta
- 2 cups2 cups2 cups Spinach
- 1 tsp1 tsp1 tsp ground Ginger
- 1 tsp1 tsp1 tsp Turmeric
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 1.5 tsp1.5 tsp1.5 tsp Salt
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add your oil, then place your chicken in your pot sauté your chicken on each side for 3-4 min or until golden.
- Remove then add your mirepoix (celery, carrots, onions) plus your garlic.
- Add salt and black pepper, then sauté veg for another 2-4 mins.
- Deglaze with 8 cups of water, then add your chicken back in and bring to a boil, then reduce simmer for 30 mins.
- feel free to skim some of the fat on top, but that is totally optional.
- remove your chicken thighs/legs let them slightly cool before shredding.
- while chicken is cooling, you can optionally blend your veggies until smooth.
- Add your pasta of choice and bring to a boil.
- let the pasta boil for about 6 mins.
- add your chicken and washed spinach in.
- add your spices and more salt and black pepper to taste if neccesary.
- simmer for another 20 mins. Keeping lid propped open.
- Garnish with Parmesan and greens.
