Green Chile with Cheese (Dairy-Free & Whole30 Option)
This creamy, cheesy Mexican classic, Chile Verde con Queso (green chile with cheese), brings the smoky richness of roasted green chiles to your table. In just 20 minutes, you’ll have an easy, versatile dish perfect for smothering burritos, filling gorditas, adding a savory kick to your morning eggs, or serving as a flavorful side dish. Plus, the recipe includes a dairy-free and Whole30 option.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- .25.25.25 White Onion, diced
- 111 Roma Tomato, small, diced
- 1 clove1 clove1 clove Garlic, diced
- 101010 Green Chilies, roasted, peeled, and diced green chiles (Anaheim, Pueblo or Hatch)
- 1-21-21-2 Jalapeño Pepper, (optional)
- .25 cup.25 cup.25 cup Chicken Broth
- 2 cups2 cups2 cups Milk, (see notes for dairy-free substitution)
- 1.5 cups1.5 cups1.5 cups Mexican Cheese Blend, Oaxaca, Chihuahua, or Mexican muenster, shredded)
- .25 tsp.25 tsp.25 tsp Kosher Salt, (plus more to taste)
- .25 tsp.25 tsp.25 tsp Black Pepper, (plus more to taste), ground
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat the olive oil in a medium saucepan.
- Sauté the onion, tomato, and garlic for one minute.
- Add the diced green chiles and stir to combine.
- If you have very mild chiles, add 1-2 diced jalapeños during this step for an extra kick.
- Next, add the milk, salt, pepper, and chicken broth.
- Let everything simmer for 3-5 minutes.
- Watch the pot carefully because if the milk boils it will overflow.
- Taste and adjust seasoning as needed.
- Finally, add in the shredded cheese.
- Once the cheese is melted, turn off the heat.
- Serve.
Notes
You can also use poblano peppers. However, poblanos are mild with a different flavor profile than the ones reccomended so they won't add much spice to the dish. Use a white Mexican cheese that melts well such as asadero, Chihuahua, Oaxaca, or Mexican muenster. If you cannot find these, use Monterey Jack or mozzarella. For a Whole30 and dairy-free version: Substitute the milk for original, unsweetened almond milk and use a few sprinkles of nutritional yeast (based on your preference) instead of the cheese.
