Chocolate Chip Banana Snack Cake
Banana snack cake is one of my favorite treats to have on hand. It’s healthy and such a good snack for the kids. Use the word cake in the title and I swear they will eat anything!
Ingredients
- 1 whole1 whole1 whole Banana
- 2 whole2 whole2 whole Egg
- 0.5 cup0.5 cup0.5 cup Coconut Milk
- 1 cup1 cup1 cup All Purpose Flour
- 0.5 cup0.5 cup0.5 cup Almond Flour

- .5 cup.5 cup.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1.5 tsp1.5 tsp1.5 tsp Baking Powder

- 0.75 cup0.75 cup0.75 cup Baking Chocolate Chips

- Pre heat oven to 350 degrees. Grease an 8x8 brownie pan.
- In a large mixing bowl, add banana, egg and coconut milk. Whisk together. Add in flour, almond flour, sugar and baking powder. Mix until the batter forms.
- Fold in chocolate chips.
- Pour into the greased pan. Place in the oven for 18-20 minutes.
- Slice and enjoy!
